Why do pepole use blow guns over sprinkler valves?
It appears to me that a sprinkler valve would have greater flow capacity allowing a more powerful shot and are of similar cost.

Right?

you put a blowgun on a sprinkler valve to modify it. http://www.spudfiles.com/forums/viewtopic.php?t=305&

but if your talking about a cloud you use the blowgun so you can hook it up to a compressor.

also the blowguns i get are half the price of a sprinkler.

that is called a modded sprinkler valve the blow gun is put right on top of the sprinkler valve to open the diaphram quicker than a traditional electric opening read more about it in the wiki

Pyromaniac- in the link you posted the little switch under the solenoid isn't that do the same thing just as fast?

no that little switch doesnt keep pressure in if the solonoid is off. Thats why you have to put some epoxy in that area.
