Hi i am relatively new to all this and i wanted to build an airsoft shotgun that runs of an HPA tank or some sort of portable air source, and that u could reload quickly with shells and all that. I don't have very much knowledge on this subject and what valves to use so any advice would be greatly appreciated, thank you.

I had a go at a shotgun, a 3/8" valve provided plenty of flow.
I used a 3/8" solenoid valve, but used the manual button as a trigger, I would think a 1/4" would be ok for air soft, or you could go with a QEV valve but then you will need a trigger valve as well. I used PVC on my shotgun but I would recommend that you don't, I did replace the chamber with stainless steel and the barrel with 3/4" copper, but it is only for Nerf Rival now. If I was going to make another shogun I would use copper again with an inner barrel and probably the 1/4" manual trigger valve.
That's quite a complex project you're suggesting, especially the "quickly reloaded with shells" part.
If you have a limited budget and only access to basic tools and materials, you might want to redefine your specifications. What sort of performance are you after? Do you want something manually reloaded like a pump action or a semi-automatic that fires every time you pull the trigger?

I was thinking about a single shot one, where it holds one shell and you pull the trigger then you reload the shell put you don't have to hook it up to an air compressor or something so maybe an HPA tank and a regulator. Thank you for your response.

I removed the solenoid coil and made a grip from 1" pvc pieces. The red button is the trigger.
